I’m transfixed by the way the cheese threatens to ooze over the side of the dish.
Congratulations to Liz (firstname.lastname@example.org) the “Big Cheese” of DiscOVIries by Nokia Week 5: What’s Your Favorite Cheesy Dish? She describes her winning entry, Eggplant Parmigiana:
Eating cheese is one of my guilty pleasures…I can finish a whole can of brie or camembert or polish off a couple hundred grams of pecorino romano or Spanish manchego by myself…but if pressed to eat a single dish featuring melted mozzarella for the rest of my life, then bring on the eggplant parmigiana!
… eggplant Parmigiana might not be named for the cheese that goes in it, but to me, this dish is the perfect foil for melted mozzarella and parmesan. This dish comforts me the way only good, warm melted cheese can. The mixture of tomatoes, onions, garlic, olive oil, and tons of mozzarella and parmesan cheese just magically transforms this almost flavorless vegetable into something profound, oozing with warmth and depth of flavor. Only part of the eggplant peeks out of the dish in my photo, you can barely see it for the mound of tomato sauce, mozzarella (God, just look at all that lovely melted mozarella!) and parmesan cheese…and that’s just the way I like it.
