In the dictionary, xanadu is defined as ”˜an idyllic, exotic, or luxurious place.’ Now if we add lashings of chocolate to that ”˜idyllic, exotic, or luxurious place,’ would that be your kind of paradise? If that’s the case, then heaven really is a place on earth incarnated in the form of this chocolate xanadu. It’s made by none other than Karen Young, she of the already famous chocolate ganache cake.
And speaking of ganache, a mirror-smooth version of it enrobes this complex yet beguiling work of genius: alternating layers of meringue, moist chocolate cake, chocolate mousse, whipped cream, and chocolate chips. The two-by-two punch of chocolate in four forms ”“ cake, mousse, chips, and ganache makes this a xanadu no self-professed chocolate lover will want to leave.
Just looking at it tells me that this is one serious dessert. Very fine and elegant in stature and taste, this is a cake that was made with much thought and effort, and demands to be eaten in the same manner. Savor it and bask in its chocolate afterglow. After all, isn’t that what a xanadu is?
A cheesecake is a blank canvas on which a baker can exercise his/her creativity. Instead of pouring on a regular canned fruit topping as others are wont to do, Karen coaxes color onto her cheesecake. This she does by carefully arranging quarters of blueberry and strawberry topping onto the cake, the sections of which are delineated beautifully by ruler-straight rows of streusel.
It’s almost heart-breaking to cut into such a vividly created masterpiece. But desire to try the cake is fast coming, and so is the urge to claim one of those four quarters. Ah, this cheesecake: 50 percent blueberry, 50 percent strawberry, 100 percent divine.
