Her name is Patti Grandidge, and while her name is intriguing, it’s the cupcakes she makes that are especially enthralling.
She calls her business Sweet Patti Cakes, reminding me of that old and widely known nursery rhyme, Pat-A-Cake, also a clapping game all children used to play beseeching a baker to “…bake me a cake as fast as you can.” Cakes have become cupcakes in this modern age and Patti bakes them best.
There’s no Crayola-kaleidoscope of colors here, just six flavors and that’s it. Every little cake is sheathed with what seems like so little frosting – I fret that it’s not enough – but surprisingly, there is. A lazy trail of cream cheese frosting barely covers the Banana Bliss. A coffee-infused buttercream spirals over the Mad About Mocha while Vanilla Manila’s rosette runs round. Lotsa Lemon plays it straight and simple with a splodge of lemon icing though its point is as pert as its flavor, and Seriously Chocolate is seriously seductive sporting its you-know-you-want-me swathe of Nutella. And look at that Ooey Gooey Peanut Butter, its patch of peanut frosting bolstered by a bevy of sprinkles.
As ever, simplicity, when done perfectly, compels.
Patti, a British-Filipino who’s relocated to Manila, spent some time in Los Angeles behind the counters at Sprinkles Cupcakes, the celebrated cupcake bakery. She says of her experience: “I took baking classes in Santa Monica to keep me busy [after I graduated university.] [Things] actually took a surprising turn, and instead of working in Fashion PR, I found myself working at Sprinkles Cupcakes in Beverly Hills! I learned so much and it was there where I got inspired for Sweet Patti Cakes.”
While every baker purports to use the “best and freshest,” ingredients, I’ve seen how this can be mere lip service for some; all it takes is one taste, after all. Patti, on the other hand, lives by the mantra of quality and consistency. Beneath the flounces of frosting lie flavor and texture, the real lures in her little cakes. Uninterrupted spans of chocolate or lemon or banana, each batter solely focused, bakes up finely-crumbed and feathery. One bite begs for another and before I know it, I’m battling my Bin away from the last bit of Ooey Gooey Peanut Butter.
Allow me to rhapsodize about this particular flavor of Patti’s. I too, am obsessed with peanut butter so if it’s on any menu, it’s my first choice. This cake is an irresistible little devil, meltingly moist and peanut buttery through and through. Amidst a crumb fragrant with butter and vanilla are nuggets of chocolate that echo the chocolate sprinkles atop. And can a cupcake ever have too many sprinkles? I think not. As heaped as this cupcake is with sprinkles, so is it heaped with deliciousness.
