The all-time, most popular post on Dessert Comes First is 5 Of The Best Chocolate Cakes in Manila. A 7-year old post, a follow-up piece is clearly long overdue. But it’s not surprising why that post has such impressive longevity and in tech parlance, “stickiness.” Who doesn’t get weak-kneed and slack-jawed at the sight (and flavor!) of a darn good chocolate cake? Flourless and mousse-y cakes have their place, but an old-fashioned chocolate cake with swirls and tufts of sticky-shiny frosting will win me over every time.
And you would think that such a homey baked good would be easy to make. I’ve been proving this wrong for almost as long as DCF has been around. There are weekends, just like this past one, that I’ve devoted to making a chocolate cake, only to be met with disappointment over dry cakes and icing that’s managed to cling to my ceiling. Yikes.
