Nuts for Nutella

There are a few food items that I try very hard not to have at home: Sebastian’s Ice Cream (any flavor), Lay’s Kettle-Cooked Potato Chips in Barbeque Flavor, Cheetos Twisted, Hershey’s Chocolate Milk, Kitkat Crunchy, and bars of milk chocolate, especially Lindt and Ritter Sport. I also used to avoid having jars of peanut butter (PB) in the house, but since my Bin started mountain biking regularly, he demands that we have PB in the house for quick energy boosts.

The above are snacks that never fail to tempt and tease me, and I can’t trust myself with them. I know myself well enough to know that if they’re in my house, I’ll eat every last bit. And no, moderation doesn’t work for me. It’s all or nothing.

The one food that I’d call my Achilles’ heel, the one that inevitably leads to my diet downfall is Nutella. I grew up on this ridiculously addicting chocolate hazelnut spread, slathering it over pillow-soft bread topped with sliced bananas, my first bite oozing chocolate onto my fingers; and in times of dire chocolate cravings, I could polish off half a small jar with just a teaspoon. Man, I miss the days I could eat like that.

As an adult, I’ve discovered more “restrained” (ahem) ways to eat Nutella: dollops on a banana or a tablespoonful mixed into hot (low fat) milk for a quick hot chocolate. When I’m feeling far from virtuous however, I let loose and spoon ribbons of the stuff on two just-out-of-the-oven chocolate chip cookies topped with vanilla ice cream that’s on the verge of melting. Now that is the last word on orgasmic.

A recent trip to the supermarket yields a 750-gram jar of Nutella. (I know, I know, this time I can’t help myself.) To make matters worse, I buy two of the damn things. Driving home, I’m kicking myself, but some part of me is gleefully thinking of what I can do with the extra jar.

Nutella Tart

In a tart…
I remember seeing recipes for Pierre Hermé’s Nutella tart (a search produces countless recipes): a crust tenderized with ground almonds is the regal receptacle for a layer of Nutella topped with a layer of melted chocolate, its surface strewn with chopped, roasted hazelnuts.

Looking at the recipe however, I decide against using the almond crust because I want a crunchy, chocolate crust that’ll emphasize the chocolate note in the Nutella; plus, I want a tart that’s brown throughout. I end up cobbling together a crust made from crushed chocolate graham crackers, shortbread cookies, and roasted hazelnuts. Bound with a little melted butter and sugar, it’s more than worthy to take on the majesty that is Nutella.

Studying the chocolate filling in Pierre Hermé’s recipe, I’m uneasy that there’s more butter (by weight) than the chocolate – something strikes me as off-balance about it in proportion to the other ingredients; and seeing that there’s also one egg and three yolks (for structure) and no cream, I realize that the resulting filling will bake up differently than if this were a ganache.

Without boring or confounding you with baking science talk, I use less butter, Valrhona Guanaja 70% chocolate, and I keep the yolks and egg. It results in an almost malleable “custard” that holds the swirls and peaks that are made as I coax it onto the Nutella. I’ve run out of hazelnuts so I decide to omit the sprinkle on top.

After 11 minutes of baking, the topping has puffed up a little and then deflates into a solid coat of chocolate as it cools to room temperature. Gazing at this creation, my mouth begins to water uncontrollably.

Dessert lovers and hardcore Nutella fans rhapsodize about its superlative, almost transcendental smell, texture, and versatility. Take all of that and multiply it by ten: it would equal the ambrosia of this tart. First, there’s a crunch of hazelnut and shortbread dancing in rhythm; and then the Nutella casts its spell, lathering my tongue in sweet velvet. The bittersweet bite of the Valrhona chocolate topping serves to prevent taste fatigue (umay), causing me to want more and more.

As I eat, my breathing deepens in gratitude. Good lord.

In a cup…
Since I have a large jar of Nutella at my disposal, I pipe some into mini muffin liners that have been coated with melted chocolate. Next, I pipe a layer of peanut butter mixed with some powdered sugar, and then another layer of melted chocolate tops the whole thing off.

These are simple, little things – I think of them as deluxe peanut butter cups smooched with Nutella. The kids I introduce them to fall in love with them, and the adults (at least the ones who like peanut butter) curse me for giving these cups to them.

so i told myself, “Self! You’re going on a diet today.”

Had some nice stir fried patola, a wonderfully steamed fresh fish, and apples.

Now, this nutella tart is seriously beckoning me. as in super serious. It looks utterly glorious!

Oooh! Another Nutella fan here! :) Everytime I see those bottles in the grocery I buy them…the only thing I really hoard. That tart and those cups looks and sound incredible…they are going straight into my Nutella recipe file…thanks for sharing them Lori! I’ve made Nigella’s Nutella Cake and a Nutella self-frosting cupcake (you can find the recipes at my blog)…the cake could use more Nutella flavor but the cupcakes are my favorite!

Wow!!! I thought I came up with some awesome peanut butter chocolate combinations but this sounds scrumptious!!!! try this: take a small ball of chocolate chip cookie dough. mold round and flat. then douse a 1/8 inch layer of pb on top. take one of those snack size hershey or dove bars and put on top of the peanut butter. close this sandwich with another flattened rounded chocolate chip cookie dough layer. top off with a mini reeses. bake. serve with scoop of vanilla ice cream and enjoy!!!

hi,
neat blog!!! as a running foodie( more of the former though), yourblog is indeed interesting. Your post on your Japan travel is awesome as I like visiting Japan. Second to my hometown,Vancouver is indeed one place to visit for gastronomic experience. My one indulgence is Stephos’ Greek Taverna on Davie St.
anyway, will be looking forward to your next post(s) And by the way, you got me there too with Nutella. Nutella on brown is usually my recovery snack after a good practice run!!!

How can you say no to Nutella? I remember my first encounter with the said hazelnut spread.

Years ago, my aunt who lives in Germany, sent us one of those really big-sized bottles of Nutella …since then, I was hooked! My grocery trip isn’t complete without getting a bottle or two of this.

Nutella is…utopia.

my first exposure to this condiment:

winter. paris. late nov 2000. my first time in paris [but the start of many visits] i stayed aned was on my own at a friend’s apartment in the 3rd floor on place dauphin right on the ille near pont neuf. somehow i found myself getting lost [in a good way] on the 5th er. around the marais near the pompidou centre. very cold maybe a drizzle of snow. 11pm or so. on the streets are vendors with steamy carts. upon closer inspection they are making crepes. one of the topping choices is nutella. so i order one. and it is simply heaven. i must have gotten back to that part of the city late at night in the the seven days of stay. and have been returning since. [tried it also with sliced bananas!]

don’t get me started on the michelin-rated restaurants…

My downfall, Nutella. Reminds me so much of high school where I would eat during class! Hahaha. Now even my son is addicted to it. Funny because I too get two jars when I go to the grocery. Try PAZZO’S Nutella Gelato. Yummy too.

I don’t mind at all waiting in between posts on this blog, because when you do update, it’s always worth waiting for. The photos are, as usual, luscious…that last one makes me want to lunge at my screen!

Like you and most commenters above, I can’t ever resist Nutella (which is why I don’t keep it at home, either). It’s already perfect on its own, but look what you’ve gone and done to it: a tart that makes me think of the most perfect possible version of Almond Roca, and a treat that every Reese’s cup would aspire to be!

I love nutella so much that I buy about 50 jars every time I go. Whenever I go to take a teaspoon I eat the whole jar. The funny thing is I eat it plain not with, bread, bannas, icecream or anything. I do want to try the peanut butter cups. It sounds so good I might even use them I am having with all my friends. Thanks for the recipe!

omg i had a teaspoon of nutella in my mouth at the very moment that i opened your blog. and just a couple of minutes before that, i had just realized that i should probably not have nutella in my house (my husband threw it into the grocery cart last-minute).

i had nutella gelato 8 years ago. it was SERIOUSLY good. thick, pure nutella swirled in creamy vanilla. it was in this little italian town that i knew i was never going back to again — which was basically my excuse to have said gelato twice a day. sure enough, never had anything like it since.

Ah Nutella…childhood memories. I was seriously addicted to that stuff as a kid, I even bought jars from my own pocket money and hid them in my room :-) and I ate it straight from the jar, spoon by spoon. There’s nothing that can beat the chocolatty nutty taste of Nutella. No other chocolate comes even close to Nutella. Thanks for sharing. Unfortunately – or should I say luckily in terms of dieting – it’s prohibitively expensive (special import) where I live.

I’ve just scraped the last drop out of my first ever jar of Nutella, and knew then I was an addict! So I googled ‘nutella addict’ and lo and behold, who knew there were so many of us….lol. It’s indescribably delicious, but I need to try not to go overboard and stay away from that aisle in the grocery store! is the fact that I am a homesick American living in a foreign country a good enought excuse to indulge my Nutella addiction??? hmmmmmm

Nutella fan here. Grew up as well with nutella and right now there this large jar just sitting in the fridge. This entry about gives me ways on how to use the one with we have at home. I usually just spread it on bread.
