Chillin’ With A Chilly Burger

All I can say is: It’s about time!
Mid-last year, Ian Carandang, the genius behind Sebastian’s Ice Cream Studio , asked me to create a chocolate chip cookie that in his words should be “… flat yet sturdy and chewy.” Always keenly aware of the constant churnings of his ever-creative mind and food desires, Ian had dreams of resurrecting Coney Island’s Eskimo Roll. Thus, the need for a cookie that met his flat/sturdy/chewy specifications. I chronicled my experiments in creating the said cookie, and rejoiced with Ian when he deemed one of the samples perfect.
But then weeks passed by, and then months. Then months became a year. I was conscious of the other ice cream sandwiches that were hitting the market, such as the one from Brothers Burger which was so lousy I didn’t even bother featuring it on the website. When it comes to novelty, timing is of the essence. Then Penny Brown came about, and man, those things were so good that I cranked up my pester power and bugged Ian to “Hurry up already and get the damn ice cream sandwiches out!”
Now they’re here and it’s Oh joy, oh joy, oh happy days!
Like almost everything Ian makes, his ice cream sandwiches are christened with that sense of whimsy he’s become known for. He calls his ice cream sandwiches Chilly Burgers, which quite frankly, is what they are. A giant pair of chocolate chip cookies (flat, sturdy, and chewy!) ensconce an inch-thick disc of ice cream. Depending upon the variant, the “burger” is then rolled in a variety of “roll-ins” like chocolate chips and/or nuts.
Those who like a good food challenge and who aren’t daunted by size, can opt to bite into this mother of a “burger.” Others, like me, who suddenly become quite refined and ahem, genteel, in the presence of other people, can slice the sandwich in half. This affords a good cross-section view of this hallowed food on which I rest my gaze upon for a minute or two. Hey, I created the recipe for these cookies — allow me my moment. (wink)
The cookie comes with some rough (food grade parchment?) paper you can use to grip the sandwich before biting into it. Teeth hit (flat, sturdy, and chewy!) cookie, and then one’s first bite is carried away by handcrafted ice cream that’s the epitome of creaminess. The cool chill reverberates through the mouth and at the back of the throat. It’s a pleasurable brrr! Once in the mouth, it’s a medley of soft, chewy, and crunchy that tapers off until the first swallow. So good is this sandwich that I can hardly wait to swallow already so that I can have another bite. Even if I hadn’t created the recipe for this cookie, I’d still be singing its praises.
Ian is quick to acknowledge Coney Island’s Eskimo Roll as the inspiration for his latest creative output and his mind is already short-circuiting with all the Chilly Burger possibilities. “The initial cookie is just chocolate chip with vanilla and chocolate but I plan to explore all sorts of flavor combinations with different cookies, ice cream, roll-ins, etc.,” he states, his eyes aglow. He rhapsodizes about dark chocolate cookies filled with white chocolate ice cream rolled in crushed Oreos or vanilla cookies filled with butter ice cream rolled in shredded coconut. I can’t stop drooling. And yes, neither will you.

Wow, this looks great and i’m sure it tastes really good. Yes, i remember the Eskimos Rolls of Coney island. This was a favorite afternoon treat when I was younger. Can’t wait to try this out!

how big is the cookie (diameter)? i assume this is made on the spot?

Wow Lori- this is almost pornographic! Ha ha! I will ignore my lactose intolerance and spend an additional 30 mins in the treadmill for this luscious goooooooodie!

I love sebastians ice cream. its not cheap tho so i try to have one once every quarter or so but it the best ive tasted. I love the chocolate chip cookie dough flavor and it might be redundant to use that as the filling but it i think it could work.

Bought one at Podium last night and enjoyed every chilly bite.
These are a nice option for birthday parties, once they’ve gotten the packaging fixed. For now, I suggest you bring a cooler or insulated bag so you can bring home a few.

I can only agree with everything you said, Lori. Yes, it’s about time! And yes, the Brothers Burger ice cream sandwich is lousy. And, yes, Penny Brown is goooood! I can rarely resist buying them whenever I pass by the Glorietta stall.
Unfortunately, I can’t yet agree about Ian’s Chilly Burgers because I have yet to try it!
But this is already the nth reason to visit Sebastian’s at Podium, so I am determined to head over as soon as I can. It’s been way too long since my last Sebastian’s fix.

wow! i get all sentimental when i remember eskimo rolls… why oh why did coney island ever have to leave our shores… it was what i had for recess, day after day after day. with my baon, i always thought i got the best deal with those eskimo rolls – may cookie na may ice cream ka pa! hahaha, it was definitely fun being a kid!

Thanks to a kind soul who took pity on my plight, I finally got to taste Sebastian’s Chilly Burger! I absolutely enjoyed it, and the cookies you created for it deserve at least half the credit. They were, indeed, chewy and perfectly complemented Ian’s wonderful ice cream. It’s much better than the Eskimo Roll, which I was never a fan of. I wouldn’t mind a few more choc. chips on the cookie, but that’s just chocoholic me.
My only suggestion for improvement would be about the paper that holds the sandwich. I like the pocket shape that some burger places (and Penny Brown) use, because it catches spills and holds the sandwich in place. That way, not a single drop of precious ice cream is wasted!

After reading your post, I just had to go try em. The ice cream sandwich was deelish, and not too sweet like Diddy Riese. I had the vanilla with nuts and chocolate chip. One comment though – I felt like the the nuts and chips on the side were stealing away from the taste of the cookies, which were already a lil too thin for me (I’m a cookie girl). I actually ended up scraping them off so I could taste the cookies in all their glory! Any chance Sebastian can make plain ones for all the simpletons out there? Warm cookies would also be nice (or at least room temperature to give somewhat of a contrast). And thicker cookies?

tried the penny brown smacker for the 1st time at glorietta yesterday… picked the dark chocolate cookie and partnered it with choco-mint ice cream… sadly i didn’t have that “penny brown moment”. the cookies were too stiff, and not at all chewy, add to that that the ice cream was too soft…hence, every bite i took caused the ice cream to just “escape” through the other side… the cookies were also just too sweet for me, so sweet that the taste of the ice cream just disappeared!… maybe i’ll have to try the sugarfree cookies to see if they’ll taste better…
i’m excited about the chilly burger though… especially with the pic you have where you’ve sliced the “burger” into two… shows me that the cookies are soft enough, and the ice cream is firm enough… will have to try it one of this days!
congratulations lori on a great blog! just came across it recently and i’ve been having a lot of fun reading the entries… keep it up!
