Tea Party Baker #3: Roshan’s Lemon Torte

Aside from my mom, I am the only person I know who can handle an acidic kick in the mouth. I’m talking about lemons and how they make my mouth p-p-pucker. I’m crazy for how the sourness makes the sides of my mouth water; it also makes my eyelids flutter rapidly, making me look like a diva wanna-be in overdrive: this reaction is brought on by lemon bars, lemon meringue pie, and Roshan’s lemon torte.

A torte in this case is three layers of crunchy meringue with roasted (whole!) walnuts baked right in. When eaten, the walnuts shatter in the mouth, giving way to the meringue’s subtle crunch of complaint before melting on the tongue in a sea of sweet, releasing a dazzling tang of lemon. Roshan has said that she can actually vary the intensity of the lemon curd in the torte, depending on the request of the client. (Oh, in that case then, maximum intensity for me, please.)

Roshan’s lemon torte is the real thing: no soggy layers of meringue and no lack of nuts that have been crushed to a fare-thee-well. Here,the nuts are whole, the meringue crisp, the way it should be. The lemon curd is true to its essence, with just enough butter and yolks to round out the sweetness and bite.

This scintillating work of lemon is disguised, almost pristinely, in a layer of whipped cream with dainty rosettes. It makes the torte look almost too nice, practically angelic – hiding the citrus-y firebomb that burns within. Hit me, baby.

Hi Lori,
Iam not really fond of anything with lemon, but I have to say that I personally like the lemon torte of Heny Sison. The meringue is also made from whole walnuts and the cake was really good but expensive, P1200 for a 9-inch round cake. I had a friend who made a cheaper version called Cashew calamansi torte which was also good. Iam looking foward to try this cake soon.

Hi, Lori! I came across your blog, I think when iw as looking for Micky Fenix’s email online. Anyway, my aunt ordered Roshan’s Lemon Torte, and she made us tried it….and OHMYGOD, it is orgasmically good. It just knocked off Conti’s Mango Bravo as my favorite cake. Also, I’m thinking of taking a basic course in Baking and Cookinf from Gene Gonzales’ School (Center for Asian Culinary Studies or something–his daughter is a friend of mine). Would that be a good jumping-board into the food world, per se? Much thanks!

Hi Lori! I LOOOOOOVE your dessert blog! Just wanted to mention that I have a cousin who makes really good cakes too! And recently, she’s been making mouth-watering desserts with limoncello liqueur. A must try is the Limoncello Pound Cake and Limoncello Mousse Cake…sooooooo moist and heavenly!

Hi Lori,

I so looove your blog! I discovered it only recently, but I am making up for everything I missed by reading your previous posts from way, way back.

There’s another yummy lemon torte that might interest you. It’s made by Gina Martinez. Her address is at 22 A.Chioco St., BF Homes, Parañaque. Her lemon torte is sooo good! Had it for our wedding cake.
She makes lots of other goodies too! :)

I had seen it initially at Anton’s ” Awesome Planet” linking it to your site. Both of you didnt mention where it is available and how much it is. In some cases like the frozen brazo de mercedes he mentioned that you can buy it at Camara’s residence in Makati.
